Offerings such as sardine namero, prepared eggplant dishes, and, depending on the time of year, seasonal vegetables like bamboo shoots or mountain garlic appear on the board and menu, pairing naturally with glasses of beer or sake.

When it comes time for nigiri, the chef's deft craftsmanship shines across a succession of pieces. Flavors shift deliberately from bite to bite, from subtly coaxed umami in young sea bream (kasugodai) and gizzard shad (kohada) to lightly torched barracuda and the crisp, succulent textures of mirugai and red clam. Woven together with staples like squid, lean tuna akami, and plump simmered clams, finishing the meal with a classic kanpyo roll makes for an unhurried, satisfying close.
